Start by poaching the tile fish. Poach in a large fish poacher or suitable alternative. Just make sure you do not crowd the pot. Bring the water and crab boil seasoning to a boil and then place the fish in the pot. Cook until the fish flakes, then remove to a bowl and let cool. ln a seperate bowl crush the sleeve of crackers to fine crumbs. Set aside 1/4 of the crumbs. Mix the remaining cracker crumbs with 4 tbs olive oil and liberly season with Old Bay or Phillips Seasoning.
- Now that the fish is cool, break it apart and season liberly with Old Bay or Phillips and fold the fish into the cracker mix. Form into Tile Cakes or Tile Balls that can be either broiled or fried. Thinly coat the cakes or balls with the egg white and again season with Old Bay or Phillips, and roll in the remaining ritz cracker. Drizzel with melted butter and broil on low for 10-12 min turning once.

1 Package of Crab Boil
Old Bay or Phillips Blackening Seasoning (we prefer Phillips)
1 Sleeve of Ritz Crackers
1 egg white, with a little water
4 TBS Olive Oil
